Gluten Free Berry Cheesecake
I did a pantry clean out challenge a few years back and this was created from ingredients I had on hand. You can substitute if you like e.g swap honey for sugar, use mangoes or any fruit in season instead of berries, use gluten free biscuits instead of nuts etc. I made this rather small as I was the only one at home and I was just using up what I had.
250g cashews, crushed
1/3 cup desicated coconut
2 Tablespoons melted butter
250g cream cheese
3 Tablespoons natural yoghurt
1/2 cup frozen berries
1/4 cup raw honey (to sweeten)
Mix the base together then press into a dish. Place in the fridge to set.
Meanwhile mix the yoghurt, cream cheese and honey together. Add the berries and mix to combine then pour onto the cheesecake base.
Place in the fridge for 1 – 2 hours to set.
It was a pretty simple effort but I really liked it.
