Pasta is a go to in our house and bolognaise makes an appearance frequently. I love it because its simple and uses up a lot of the vegetables that have seen better days.
300g beef mince
Red kidney beans
1 Diced onion
Chopped baby spinach leaves
1 tin diced tomatoes
Any other vegetables you want to use, grated or chopped finely
Heat some oil in a frying pan and saute the onion and garlic. Add mince and brown.
Add the kidney beans (my kids just eat them whole but if your family doesn’t like them squashing them makes them harder to see and easier to eat)
Add the rest of the ingredients and simmer for 10min.
Serve over pasta with grated cheese and garlic bread.
Other vegetables I have added include mushroom, capsicum, beans and roasted pumpkin.
