These scones are very easy, are a great way to use up cream that is going off and leftover lemonade. They are the perfect post party recipe to stop you wasting food!
1 cup cream
1 cup lemonade
3 cups self raising flour
1.) Preheat oven to 180C
2.) Place all the ingredients in a bowl and mix to form a dough.
3.) Place the dough on a floured surface such as bench or chopping board.
4.) Roll or press the dough down to be about 1 – 1.5cm thick.
5.) Using a circle cookie cutter or a drinking glass, cut out circular shapes in the dough and place on baking trays.
6.) Push the remaining dough back together and repeat steps 4 and 5 until you have no dough left.
7.) Bake scones for 15 – 20 minutes, until golden.
8.) Serve with whipped cream and jam
– Cream does not need to be very fresh. It can be cream that is turning or about to go off
– Dip the cookie cutter or glass in flour to stop the dough sticking.
You can also add things like cheese, herbs, mashed pumpkin or fruit and spices to change things up a bit.
